Chicken Parmesan

Ever since I saw an image of this online, I’ve already wanted to hack the recipe.

Here’s my twist of the chicken parmesan. It can be a little messy, but it’s absolutely worth the effort!

What you’ll need:
1/2 kg chicken fillet (breast is ideal, but I prefer thighs)
1 cup flour (add if necessary)
2 tbsp salt
1/2 tbsp ground black pepper
1 egg
1/2 cup cheddar cheese
1/2 cup parmesan cheese
7-8 Mozzarella cheese strips (number of strips depend on how much chicken fillet you have)
Cooking oil

Step 1
In a large bowl, mix the following:
Flour, salt, pepper, parmesan cheese, and cheddar cheese.

Set aside.

Step 2
Beat the egg and then dip each chicken fillet in it.

Step 3
Cover each piece with the breading that we made in step 1 and set aside on a plate. Continue this with all the other fillets.

Step 4
Fry each piece over medium heat, with cooking oil just enough to cover the bottom half of each piece.

Each side is to be cooked for 5-6 minutes.

Step 5
After flipping to cook the other side, put the mozzarella strip on top of each fillet during the last 2 minutes of cooking. This is to melt the mozzarella cheese on top of the fillet.

Step 6
Take out of the pan and let it rest for two minutes to drain the oil.

Serve over salad or any pasta dish.

With or without Marinara sauce, this is a sure treat!
